20 Large green prawns
100ml Pukara Estate Garlic Flavoured Extra Virgin Olive Oil
¼ cup finely chopped parsley
2 cloves garlic finely sliced
Cut the heads of the prawns and peel the tails. Cook the heads in a 1/3 of the Garlic Oil in frying pan at a med/high heat. Remove from the pan and squeeze the juices from the head into a fine sieve, collect in a bowl and set aside. Add the remaining oil to the pan and add garlic and diced chilli. Saute for 1 minute and then add prawns to pan. Cook quickly turning over once, add juices and parsley, stir through. Serve on rice with lemon wedges to garnish.
